During proofing:

This gas helps your dough expand and contributes to the final rise of your loaf.
The dough relaxes
After shaping, the gluten structure needs time to settle.
This helps the dough hold its final shape and bake evenly.
Flavour continues developing
The longer your dough ferments, the more flavour can develop.
This is one reason many bakers use a slower fridge proof.
How long should proofing take?

A ready-to-bake dough usually:

Remember: the dough is not trying to become twice its size.
You are looking for a balance between strength and fermentation.
