Few things are more frustrating than watching your dough sit there and do nothing.
You’ve mixed it, you’ve waited… and it just isn’t rising.
The important thing to know is this: when dough doesn’t rise, it’s almost always a fermentation issue—not a “bad dough” issue.
Let’s break down what’s actually happening.
The short answer
Dough usually doesn’t rise because:

the starter wasn’t strong enough

the temperature is too cold

the bulk fermentation hasn’t had enough time

or the dough has over-fermented and lost structure
Most rising issues come down to timing, temperature, or starter strength—not ingredients being wrong.
First: what “rising” actually depends on
Dough rises because your starter’s wild yeast produces gas as it feeds.
That gas gets trapped in the gluten structure and causes the dough to expand.
So if dough isn’t rising, one of three things is usually happening:

the gas is escaping or not being trapped

or fermentation is happening too slowly to notice
The most common reasons your dough isn’t rising
1. Your starter isn’t strong enough yet
This is the most common cause.
If your starter:

2. Your dough is too cold

Warm dough behaves very differently from cool dough.
3. It simply hasn’t had enough time
Sourdough is not a fast process.
Depending on conditions, bulk fermentation can take anywhere from a few hours to much longer.
If you’re used to yeasted dough, sourdough can feel “slow” even when it’s working exactly as it should.
4. Over-fermentation has weakened the structure
If dough is left too long, it can stop rising and start to collapse.

5. Gluten structure isn’t developed enough
Even if gas is being produced, the dough won’t rise properly if it can’t trap that gas.

Without structure, there’s nothing to “hold” the rise.

Ask yourself:

Was my dough kept warm enough during fermentation?

Did I give it enough time before judging it?

Did I develop enough structure during folds?
These questions usually reveal the cause quickly.
When should you worry?
There are only a few real red flags:

starter never showed activity before use

dough shows no change at all after extended time in warm conditions

signs of contamination (unusual colours or smells)
Otherwise, most “no rise” situations are fixable with time and adjustments.
