the dough becomes more elastic and easier to work with
The dough stays as one large piece, which is why it is called bulk fermentation.
The goal is to build strength and allow fermentation to begin before shaping.
What is proofing?
Proofing is the final fermentation stage after your dough has been shaped.
Once your dough has been shaped into its final loaf shape, it rests again before baking.
During proofing:

the loaf prepares for the oven
This stage helps determine the final rise and texture of your bread.
Why does the difference matter?
Understanding the difference helps you troubleshoot your bread.
For example:
If bulk fermentation is too short:

The dough simply hasn't had enough time to build strength.
If proofing is too short:

Can bulk fermentation and proofing happen in the fridge?
Yes.
Many sourdough bakers use a fridge proof after shaping because the cooler temperature slows fermentation and allows more flexibility.
A cold proof can:

make the dough easier to score and handle
However, the fridge does not completely stop fermentation.
Your dough is still changing—it is just moving much slower.
Which stage is more important?

If one stage is rushed or pushed too far, it affects the final result.
