How to Rehydrate Sourdough Starter

If you’ve just received your dehydrated sourdough starter, welcome.

What you have in your hands is a living culture that’s been carefully maintained, fed, and gently dried so it can travel safely and come back to life in your kitchen.

Activation is the process of waking it up again.

It’s not instant. It’s not linear. And it doesn’t always look the same for everyone.

Some starters become active within a couple of days. Others take a little longer to fully settle in.

Both are normal.


Before you start (this matters more than people think)

Your starter doesn’t need perfect conditions—but it does need consistency.

Before you begin, make sure you have:

  • a clean jar or container

  • access to flour (plain or bread flour works well)

  • filtered or clean water

  • a warm, stable spot in your kitchen

Temperature plays a huge role here. If your kitchen is cool, everything will simply take longer.

That’s not failure—it’s biology.


Step-by-step activation process

This is the method I recommend for best results.

Day 1: Rehydration

  • Add your dehydrated starter to a clean jar

  • Add lukewarm water and stir until mostly dissolved

  • Add flour and mix into a thick paste (like a very thick batter)

  • Cover loosely and leave in a warm spot

You may not see anything happening yet. That’s completely normal.


Days 2–3: First feeds

  • Discard most of the mixture, leaving a small amount

  • Feed with fresh flour and water

  • Mix, cover loosely, and return to a warm spot

  • Repeat every 24 hours (or every 12 hours if it becomes very active)

At this stage, you might see:

  • a few bubbles

  • a slight rise and fall

  • changes in smell

Or you might see very little. Both can be normal.


Days 4–7: Building strength

  • Continue regular feeds

  • Watch for rising and falling after feeds

  • Look for a pleasant, slightly tangy aroma

  • Try to keep feeding times consistent

This is when most starters begin to stabilise.

You’re looking for patterns now, not perfection.


What “success” actually looks like

A fully active starter will:

  • reliably double in size after feeding

  • show consistent bubbles throughout

  • smell pleasantly sour (not harsh or unpleasant)

  • feel light and airy before it collapses again

Once you see this pattern repeatedly, your starter is ready to bake with.


Common concerns (read this before you worry)

“Nothing is happening”

This is extremely common in the first few days.

Most starters are simply adjusting. Temperature and time are usually the reason—not failure.


“It rose once and then stopped”

This is part of the stabilising phase.

Early activity doesn’t always mean it’s fully ready yet.


“It smells strange”

Smell changes are normal during activation.

What matters is that it gradually shifts toward a mild sour, yoghurt-like aroma over time.


“It looks dead”

A starter can look completely still and still be alive.

Bacteria and yeast activity is often happening at a level you can’t see yet.


What NOT to do

These are the most common mistakes that slow activation:

  • changing feeding ratios constantly

  • moving it between warm and cold spots

  • adding extra ingredients (sugar, yeast, etc.)

  • giving up too early

  • overfeeding before it has stabilised

Consistency always wins here.

Every starter I’ve worked with behaves slightly differently at the beginning.

Some look “perfect” by day two. Others take their time and then suddenly become strong, stable cultures.

The ones that take a little longer are not weaker—they’re just slower to settle.

Trust the process, not the timeline.


When your starter is ready to bake with

You’re ready when you consistently see:

  • doubling after feeds

  • predictable rise and fall cycles

  • a stable, pleasant smell

  • a light, airy texture before it collapses

At that point, you don’t need to wait for perfection—you can start baking.

Go back and check:

  • temperature

  • feeding consistency

  • flour quality

  • time (most issues are simply “not enough time yet”)
